My way tripe

Ingredients | - 4 kg tripe - 3 garlic cloves - tomato puree - 1 glass white wine - 6 celery ribs - 3 carrots - 2 Cureggio and Fontaneto Blond Onions Slowfood Presidium - salt and pepper |
Method
Brown the vegetables you will have already blended in the mixer with extra-virginolive oil. Add the tripe, pour with the white wine and let it evaporate on high heat.
Add the tomato puree, salt and pepper and cook for at least 3 hours.
