Gorgonzola harmony

Ingredients | - 0,5 lt milk - 120 g flour - 100 g butter - 4 eggs - 200 g Gorgonzola cheese - 500 g Venus black rice • thymes, laurel, salvia • sweet Gorgonzola • 2 bosc pears • 1 lt Nebbiolo wine • 300 gr sugar |
Method
Prepare the Béchamel sauce with milk, flour and butter. Add the egg yolks andthe Gorgonzola cheese. Once the cream is cold add the egg whites (already stiffed)
and salt. Fill the cups after having them spread with butter and cook in the oven
at 120° for 15 minutes. Boil the rice together with the thymes, laurel and salvia
for about 30 minutes then fill the cups and cover with melted Gorgonzola cheese.
Peal the pears, boil them in wine and add sugar.
